Plain Pulav Rice

Plain Pulav Rice is the most popular way to serve rice.They  are often served at parties and on any festive occasion.This  dish made from everyday ingredients but packed full of exciting flavours. It will be appreciated by vegetarians and meat eaters also.

Ingredients:
basmati rice - 300gm
ghee oil mix - 3 -4 tbsp
chopped onion - 1
ginger garlic paste - 2 tsp
fennel seeds - 3/4 tsp
whole cloves - 3
cardamom -4
cinnamon - small piece
black peppercorns - 6
bay leaf - 1
turmeric powder - 1/4 tsp
cumin powder - 3/4 tsp
chicken or veg soup cube -1
water - 500- 600 ml
chopped coriander leaves - to garnish.

Serves -  3 - 4
Duration - 30 minutes.
Steps to follow:
Wash and soak the rice for 10 minutes, drain it and keep aside.


 In a heavy bottomed vessel heat oil ghee mix and add fennel seeds, clove,cardamom,cinnamon,pepper corns  and bay leaves. Stir well for a minute.
 Add chopped onions, fry for a minute then add ginger garlic paste and stir again for a minute.
 Add turmeric and cumin powder.Stir well.

 Add soaked basmati rice,gently stir  for one minute.

 Meanwhile get ready with the measured hot water dissolved with chicken or veg soup cube.
Pour the hot  water to the vessel. Add salt to taste.
 Bring to the boil, then cover and reduce the heat.

 After 7-10 minutes cover the vessel with aluminium foil and tightly close the lid.

 After 5 minutes switch off the flame.


Then open the lid after 5 minutes.Gently stir the pulav and serve.
Transfer pulav rice  to a serving  dish garnish with chopped coriander leaves.

Kibas

 This is an excellent combination of left over rice and chicken which is lightly flavoured with simple ingredients.

Ingredients:
left over cooked rice or briyani rice - 2 cups
left over cooked chicken (minced ) - 1 cup
( if you want to cook fresh chicken  and use ,while cooking add half tsp ginger garlic paste,quarter tsp turmeric and chilli powder,salt)
chopped onion - 1
green chilli - 1-2
chopped coriander - 2tbsp
pepper powder - 1/2 tsp
salt - to taste
oil for frying.
3 tbsp or more maida for dipping.

Serves -2-3

Steps to follow:
If rice is ready, this is easy to make with in half an hour.
If left over briyani chicken or gravy chicken is not there cook chciken freshly. (Mix  the chicken with half tsp ginger garlic paste, quarter tsp chilli powder,quarter tsp turmeric powder and salt to taste.Cook the minced chicken without water and keep aside.) Here I used left over briyani chicken.

 In a pan add 1 tbsp oil, stir fry the chopped onion and green chilli. Then add cooked minced chicken,salt,pepper  and stir well.
 Then add chopped coriander and mix well.
 Coarsely grind the rice with little salt and divide ground rice into 6 balls.
 Shape ground rice  into flat balls and fill with one tbsp of cooked minced chicken.
 Then fold it and form into cutlets.
 Dip it in maida and keep aside.
 Heat oil in a pan and fry the kibas till golden brown in medium flame.

Drain the fried kibas in paper towel.
 Serve warm garnish with coriander leaves and tomato slices.

Stuffed Tomato Parsley Omelette

This Omelette makes an excellent tiffin at any time of the day and also  very light and nutritious.

 Ingredients:
2 eggs
chopped  medium size tomato -1
chopped parsley - 2 - 3tbsp
chopped  green chilli -1
freshly ground pepper - 2 pinch
a pinch of salt
butter or ghee to fry - 1-2 tsp.

Serves -1 or  2
Steps to follow:

In a bowl   beat the eggs with pinch of salt.
 Add chopped chilli, parsley and tomatoes.
 Mix well.
 In a pan heat ghee or butter.Pour the egg mix  into the pan.Sprinkle freshly ground pepper over it.
 Fold like this, turn and cook till done.


Just serve immediately. Yummy tasty healthy stuffed tomato parsley omelette is ready.Enjoy ! :)
You can have just like that  or with freshly made chappathi or with toasted bread slices.

Mutton Cutlet

 A delicious lamb dish, this is easy to prepare and very tasty.This cutlet is very common in Indian homes.

Ingredients:
boneless lamb - 100-150 gm
ginger garlic paste - 1 tsp
chilli powder &turmeric powder -each quarter tsp
medium size potato - 1
chopped coriander & mint leaves each 1 tbsp
chopped onion - 2 tbsp
chopped green chilli - 1-2
fennel powder - half tsp
garam masala - quarter tsp
egg - 1
bread crumbs - one cup
oil - to fry
salt - to taste.
Serves - 2-3.
Steps to follow:
Pressure cook the lamb pieces along with ginger garlic paste,chilli,turmeric powder and salt.Then mince the  lamb pieces and keep aside.
Boil and peel the potatoes and mash well, keep aside.
In a bowl add minced meat, mashed potato chopped onion,chopped coriander& mint leaves,chopped chilli, fennel and garam masala and salt to taste.


 Mix well.

 Shape the mixture into six balls.
 Beat the egg in a bowl and also keep ready the bread crumbs  in another bowl.
 Dip the meat balls in egg and roll it in the bread crumbs.
 Then make the balls into heart shape or oval or round shape as you desire, this is for valentine's day event so I shaped the cutlets like heart.
 Heat oil in a frying pan, deep fry or shallow fry the cutlets in a medium low flame till golden brown.
 Drain the excess oil in paper towel .

 Serve hot or warm with tomato ketchup.
You can make the meat balls a day in advance .Cover and store in the refrigerator until needed.
